Fried rice in the Philippines is basically left over rice from the day before. That’s why Filipinos would normally eat fried rice with a viand of their choice before starting their day. Yeah I don’t eat a lot of cereals! Lol.

- 1 large eggplant
- 3 chayotte
- 1 cup chopped carrots
- 1 green bell pepper (chopped)
- 3 cups kale (chopped)
- 3 chopped roma tomatoes
- 1/2 tps thyme
- 1 red bell pepper (chopped)
- 1/2 cabbage (about a pound)
Spices
- 1 1/2 tbs of maggi chicken bullion
- 1 tps paprika
- 2 tps salt
- 1/4 tps oregano
- 1/2 tps ground cloves
- 1/2 tps ground pepper
- 5 cloves garlic
Directions
- chop all the vegetables, and put it in a pot, add 1 cup water and bring it to a boil until chayotte is soft.

Note:
You can not use newly cooked rice. If you do, make sure you let it dry
for a little bit. You do this by stirring the rice in the pot and let it
sit uncovered. As it cools down, it will dry.
