Frosting
Assembling the Cake
- Using a double boiler, melt the chocolate with the water, stirring it smooth.
- In a large bowl, cream butter with sugar using an electric mixer until light and fluffy.
- Add the egg yolks, one at a time, beating after each addition.
- Mix in the melted chocolate and vanilla.
- Sift the flour with the baking soda.
- Add dry ingredients alternately with the butter milk to chocolate mixture. Mix until smooth
- Beat egg white with the salt until very stiff peaks form. Fold into the batter.
- Spread batter into prepared cake pans.
Bake
- Bake for 30 - 35 mins. Cool on a wire rack for 10 mins. Remove the cakes from the pans. Cool completely and peel off the parchment paper before frosting.
Frosting

Assembling the Cake
- Spread some of the frosting over top of one of the cake layers.
- Place second cake layer on top and frost and repeat with the third layer.
- Frost all the sides of the cake.
