Fried Rice
Fried rice in the Philippines is basically left over rice from the day before. That’s why Filipinos would normally eat fried rice with a viand of their choice before starting their day. Yeah I don’t eat a lot of cereals! Lol.
Ingredients
- 2 Cups of Cooked Rice (see notes)
- 2 to 2 1/2 cups water
- 3-4 Chopped Green Onions
- 2 Tbs. Oil
- 3 Eggs
- 3-4 Cloves minced Garlic
- Teriyaki sauce (optional)
- Salt
Directions
Prepare the white rice
1. Combine rice and water in rice cooker.
2. Click on the cook button to cook rice.
Prepare the eggs
1. Break the eggs in the pan where you’re going to cook the fried rice.
2. Scramble the eggs in the pan, not in a bowl.
3. When done, take it out of the pan and chop into smaller pieces, then set aside.
**You do not want the eggs well done at this point. Just a little on the wet side is perfect! It will cook completely when you put it back in later.
Fried rice
1. In the same pan, sauté garlic in oil. Do not brown. (med – med High heat)
2. Add rice and mix it well with the garlic. Add salt according to taste. Let it sit on top of the fire for 1 min to 1 ½ mins., then stir. Repeat stirring a few times. If the rice looks dry, add a little oil.
3. Add a small amount of teriyaki sauce to give a little flavor according to your taste. Do not put too much. Teriyaki sauce is optional. BUT it taste better with it!
4. Add the green onions and eggs. Stir a little bit (***No matter what you add to your fried rice, always add these two last.***)

Note:
You can not use newly cooked rice. If you do, make sure you let it dry
for a little bit. You do this by stirring the rice in the pot and let it
sit uncovered. As it cools down, it will dry.
