Cream Cheese Quiche

Makes 12 servings
- 8 oz. Cream cheese
- 1/4 cup whipping cream
- 4 eggs
- Spinach (chopped in small pieces)
- Red onions (chopped)
- Salt
- Ground pepper
- Cherry tomatoes (cut in halves)
- 1 loaf of white bread (cut edges off)
Directions
- Pre-heat oven to 350F.
- Soften cream cheese in a microware or let it sit in room temp.
- In a small bowl, combine cream cheese, eggs, spinach, whipping cream
- Flatten bread with a rolling pin and mold each sheet into a muffin pan.
- Fill each cup with about 1/4 cup of batter and top with with tomatoes and onions.
- Add salt and pepper according to taste.
- Bake for about 10 - 15 mins or when filling is cooked and bread is a little golden brown.
