Classic Home Fries

Serves 6 - 8
- 1 pound medium-sized red skin potatoes
- 1 pound medium-sized yukon gold potatoes
- 3 tbs. vegetable oil (divided)
- 1 small red onion, silvered
- 1/2 red pepper (diced)
- 1/2 green pepper (diced)
- 1/4 tps paprika
- 1/4 fps fresh ground pepper
- 1 tps. sea salt, to taste
Directions:
- Place potatoes in a large pot and cover with cold water. Bring the pot to a boil over high heat, then reduce the heat to low. Simmer potatoes for 15 - 2 mins, or until tenter. Drain and cool potatoes slightly. When they are cool enough to handle, cut them into quarters.
- In a cast iron pan, heat 1 tbs of oil over medium-high heat. Add the onion and pepper and sauté until tender. Transfer the vegetables to a plate. Add the remaining 2 tbs of oil. When the oil is hot, add potatoes and cook until golden brown on the side. 3 - 4 mins. Carefully turn the potatoes with a spatula and cook until folder grown on the reverse side. Take care not to over crowd the pan; if necessary, cook potatoes in batches. Add the paprika, reserved vegetables, pepper, and salt to taste. Toss gently to combine all ingredients. Serve immediately.
